Enjoy the summer with this easy AND healthy Peach Salsa Steak!
Ingredients:
For the steak:
- 2 Steaks — 6 oz New York Strips/1 inch thick
- Salt and Pepper, to taste
- 1 Tbsp Olive Oil
For the salsa:
- Tomato
- Lime
- ½ Onion
- 1 Jalapeno
- 1 Red Bell Pepper — cored and cut into pieces
- 2 Peaches
- Cilantro (optional)
- Salt and Pepper, to taste
Recipe:
- Let steaks come to room temperature.
- Season steaks on both sides with salt and pepper, to taste.
- Preheat skillet over high heat until just beginning to smoke. Add olive oil and heat until shimmering.
- Lower heat to medium and add steaks. Let steaks cook undisturbed for 3 minutes on each side for medium doneness. Let steaks cook 1 minute longer each side for medium -well or well-done, depending on the size of steaks.
- Remove steaks and let them rest on a plate. Let steaks rest for 5 minutes to retain juices and allow heat to evenly distribute and finish cooking.
- While the steaks are resting, wipe out skillet. To the dry skillet, add the halved onion, jalapeno, red bell pepper. Cook over medium heat for 3 minutes or until charred.
- Remove vegetables from the skillet and allow to cool slightly. Chop the jalapeno, onion, and bell pepper, and add to a bowl. Deseed a tomato, chop, and add to bowl. Chop peaches, and add to bowl.
- Add 1 Tbsp of cilantro, if using, and the juice of 1 lime. Season with salt and stir to combine.
- Slice steak and top with salsa. Enjoy as is or in a tortilla!
